If one dish sums up Sake Izakaya, it is this one. The name says it all: Japochuelo, half Japan, half gazpachuelo.
From gazpachuelo to Sake
Gazpachuelo is one of Málaga's own soups: a hot fish broth bound with mayonnaise, a classic in homes and in the old fishing neighbourhoods of the city.
Juan López, Sake's chef, spent years immersed in Japan and learned his trade in kitchens in Tokyo, London, Thailand, Peru and Spain. His cooking fits into a phrase we repeat a lot at the house: Japanese by craft, Malagueño by produce. Japochuelo is exactly that, served in a bowl, and the best way to understand what an izakaya is, told from Málaga.
What's in it
- Monkfish broth.
- King prawns.
- Mayonnaise made with their coral, which binds the broth, just like a traditional gazpachuelo.
It is a dish for two people and costs €24. You will find it among the hot pots and stews (nabemono) on the menu.
